Recipe : Air-fried Doughnuts

Monsoons – aren’t they the BEST ??? There’s an innate urge to go sit by the window and relish the downpour with a bowl of delicious crunchy snack on our lap. Snacks, they make the rain more special and without them the joy that rain brings remains inadequate.

But, have you ever tried to think beyond the conventional pakode? Probably not!! There’s always more you can do with your snack.

Today, I’m going to show you how you can experiment and can make unconventional use of your kitchen appliances to whisk up lip-smacking snacks and make your monsoons more special.

Let’s make DOUGHNUTS !! I have used my newly purchased Bajaj Airfryer.




First, preheat the Bajaj airfryer to 180c. Then whisk butter, self raising flour, caster and brown sugar together in a mixing bowl.

Separately mix milk, butter and egg.

Now gently mix the second bowl into the first. Just combine the ingredients and do not over mix it.

Next remove the center portion from the doughnuts to make them look like pre-cooked doughnuts.

Place the doughnuts on a greased baking sheet inside the Bajaj airfryer. Cook for 15 minutes at 180c. Alternatively you can check if they spring back when lightly pressed.

Let them cool for 5 minutes and meanwhile you can start on the icing part.

Prepare a creamy mixture by slowly adding icing sugar to the butter cream. Add blended strawberries and food coloring to whipped cream and mix.

Top up the cooled doughnuts with the colorful delicious icing and serve with a smile!

Ingredients –
Bajaj Airfryer
175g  Raising Flour
60g Sugar
100 ml Whole Milk
1 TSP Baking Powder
2 Tbsp Butter
1 Large Egg
½ Tsp food color ( of your choice)

The Coastal Maccha : From the Coasts of India 

The small eatery in the heart of Southern Avenue – it’s quirky sand bed tables embellished with pebbles and corals, adorning the ceiling are typical wicker baskets which are a common sight among Indian fisherman, the tiny colorful boats and the aroma of freshly made coastal delicacies; everything came together to set the mood for a divine experience. The mood was set and now the food. The folks at Coastal Macha has curated a menu encompassing delicacies from across the shores of India. And trust me, that’s not an easy job !! But Sabrina and Piyush has lived up to the name. Their eclectic offerings in Goan, Kerala, Konkan, Maharashtrian, Malwani, Mangalorean cuisine deserve accolades.  IMG_20170215_192959073

The ( #MustTry ) Prawn Sukha , the Chicken Ghee Roast and the Appam won my heart. Made with mangalorean spices and coconut the sukha was a subtle yet delightful addition to the meal. The Sukha blended well with the Appam. Appam is a typical Indian pancake created from fermented rice batter and coconut milk. And the ghee roast, while heavy on my stomach was a plain delicious to my taste buds. xxsss

The kokum cooler was a refreshing addition. It is an Ayurvedic summery drink from the coasts of India. IMG_20170217_034656

Bhetki rawa fry and Squid Koliwara were interesting additions to the dinner.  Fresh Bhetki with a thin coating of breadcrumbs fried optimally for a pure blissful taste. zzaaa

And a #MustTry is the Parippu Payasam made of condensed milk , jaggery and roasted moong dal garnished with cashews  and ghee. This is one of the best desserts I have had in a long long time.
